Cooked and stretched pasta filata cheese is dropped into the machine. Positive displacement is used to fill a mult-cavity mold. While this mold is filling, an identical mold is having the cheese sticks ejected. The mold pair then slides sideways so that the process can be repeated. Cheese sticks are ejected into chilled salt brine to cool and absorb salt.

The machine may be configured to produce string cheese however production volume is less.
